NORDIC HAUTE CUISINE: RESTAURANT NOMA

The "noma" is a Danish two Michelin star restaurant in Copenhagen directed by René Redzepi. The name noma is a combination of the two Danish words nordisk (Nordic country) and mad (food). In 2010 and 2011 it has been labelled as the Best Restaurant in the World by "Restaurant", a British magazine dedicated to the fine dining end of the industry. The restaurant reinvents and redefines the Nordic kitchen. I really like the concept of only using products from Denmark and the Nordic regions. There is no olive oil, no tomatoes, but a lot of flowers, wild plants, berries, mushrooms. They cook with seasonal and local products. The menu changes with the seasons and is inspired by nature and the Nordic landscapes. René Redzepi also wrote a book "NOMA" about time and place in Nordic Cuisine, presenting the concept and the philosophy of his restaurant.
