Frustrated by not finding the right space for his own shop, Jon Darsky put his concept on wheels and is turning the food truck world upside down with the opening of Del Popolo (Italian for “of the people”), a mobile pizzeria that features a 5,000-pound 6-by-5-foot wood-burning oven from Naples and glass-enclosed exhibition kitchen inside a deconstructed trans-Atlantic shipping container. The 12-inch Neapolitan pizzas are prepared using an onboard dough mixer and organic domestic and Italian ingredients. Darsky, a former professional baseball scout with a degree from Brooklyn Law School, turned to pizza in 2007 after not passing the California State Bar. He was the opening pizzaiolo for Flour + Water and also worked at Pizzeria Deflina. “I may be only getting five hours of sleep a night,” Darsky said, “but I am happy what I am doing and excited to see the response and where this takes me.”
